TLT ISLAND INSPO at Home – Pineapple Express Smoothie Bowl – Series 2
For TLT Island Inspo at Home Series 2 we have teamed up with The Coconut Hut, who are renowned for their deliciously fresh, clean food ( some of the BEST salads on Lembongan), great cocktails and the ONLY place to play mini-golf on Nusa Lembongan. They have kindly shared with us the recipe for their BEST SELLING smoothie bowl – Pineapple Express. This is easy to re-create at home and will have you feeling all the island vibes. Perfect for breakfast or could also be served as a dessert for an after dinner treat.
Pineapple Express Smoothie Bowl – By The Coconut Hut
Ingredients (makes 2)
1 x Whole fresh pineapple
1 x Big banana or 2 x small
2 x Tbsp honey
1 x 400ml can coconut milk
Toasted grated coconut
Cut the pineapple in half, and spoon out the fruit and set aside leaving a 1cm edge in order to make the bowl. Seal the pineapple bowls and refrigerate.
Take the fruit and slice 8 thin pieces for garnish, then place the remainder in a reusable zip lock bag.
Cut the banana into bite sized pieces, and place in the zip lock bag with the pineapple.
Freeze for 4hrs, or overnight.
Take the frozen fruit, and put in your blender with all other ingredients. Blend until the consistency is thick but smooth, like ice cream.
Spoon the ice cream into the pineapple fruit bowls, add toppings and mint sprig, and take your instagram photo.
